🍋🍰 Lemon cake * 300 g butter * 3 dl sugar * 5 pcs. egg * 1.5 teaspoons baking powder * 6 dl wheat flour * 1 teaspoon butter, for greasing the mold * juice and grated peel of 1 pc. lemon Lemon syrup, for dipping warm cake: * 1 dl lemon juice * 1 dl sugar Glaze: * 3.5 dl caster sugar * 2 tablespoons lemon juice, or milk * 1 tablespoon Greek yogurt * 1. Preheat the oven to 175 °C. * 2. Stir butter and sugar until fluffy, white and creamy. * 3. Add one egg at a time, and mix the mixture well between each egg. * 4. Sift together the baking powder and flour, and add it to the batter. Mix everything well and stir in lemon juice and zest. Divide the batter into two greased 1-litre moulds. The cake can also be made in a spring form 22 cm in diameter or in a long pan * 5. Place the forms on the bottom rack of the oven and bake the cake for approx. 50 minutes. Check whether the cakes are done by poking the cakes with a toothpick or a wooden skewer. If nothing sticks to the stick, the cakes are ready. * 6. Make the syrup: Boil lemon juice and sugar in a saucepan and stir until the sugar has melted. Let it boil for a bit, so that it thickens a little and takes on a syrup-like consistency. Cool down. * 7. Take the cakes out of the oven and poke small holes in them with a stick (for example a wooden skewer). Place the forms on a wire rack, and pour over the lemon syrup. Cool down. * 8.
